Ingredients

    • 1 teaspoon arrowroot or cornstarch
    • 1 teaspoon water

Instructions

  1. To make the goat cheese, heat goat milk in a non-reactive pot over low heat until it reaches 180-185ºF. You should see gentle bubbles.
  2. Remove from heat, stir in lemon juice, and let it sit for 10 minutes to curdle.
  3. Line a colander with cheesecloth and carefully pour in the curdled milk. Gather the cheesecloth and tie it into a bundle, allowing it to drain over a bowl for at least 1 ½ hours or overnight.
  4. To prepare the blueberry compote, combine 1 cup blueberries, 3 tablespoons water, lemon juice, and sugar in a saucepan. Cook over medium heat for 10 minutes, then mash until smooth. Add the remaining blueberries.
  5. In a small bowl, mix arrowroot with 1 teaspoon water until smooth. Stir this into the blueberry mixture, raise the heat, and boil for 1 minute until slightly thickened. Set aside.
  6. Preheat the oven to 450ºF. For the biscuits, mix all dry ingredients in a medium bowl. Cut in cold butter until it resembles coarse meal. Add buttermilk and mix until just combined.
