- 1 whole avocado
- 1 tablespoon chipotle pepper in adobo sauce
- 1-2 teaspoons adobo sauce
- 2 tablespoons vegan mayonnaise
- Juice of 1/2 lime
- 1-2 cloves garlic
- 1 tablespoon almond milk
- 1 small head red cabbage
- Juice of 1 lime
- Chopped cilantro, for garnish
- 8-10 corn tortillas
Instructions
- Drain the tofu and slice it into 8-12 slabs. Optionally, brine the tofu by boiling salted water and pouring it over the slabs for 15 minutes. Drain afterward.
