Gol Gappay also known as “panipuri” is basically a dish of Gujrati origin. It is a popular street snack all over Asia especially Pakistan, India, Bangladesh and Sri-Lanka. A Gol gappay or panipuri stand is a common sight in Pakistan or Indian streets. A small round, hollow puri is filled with assortments like Tamarind, boiled potatoes, chickpeas, green chutney(spicy) along with anything else that you want. It is placed in the mouth and eaten in one go. The ingredients put inside the puri, vary from region to region. It is served with flavored water which can be either spicy or bittersweet. Tamarind in water also known as “imli ka pani” is a common choice apart from Lemon juice in water (nimbu ka pani), dates in water, (khajur k pani) and mint in water(pudinay ka pani). This particular recipe deals with Gol Gappay served with tamarind water.

Ingredients:

  • For the Gol Gappay
  • 500 gram of Semolina Flour
  • 1/2 tsp salt or as per requirement.
  • water as per requirement
  • For Tamarind water
  • 4 tbsps of Tamarind paste
  • 1 tsp black salt
  • 3 tbsp lemon juice
  • salt to taste
  • 1/2 tsp red chilli powder
  • 3 cups water
  • 2 tsp cumin seed powder.
  • For the mixture
  • 1/2 kg potatoes boiled and cut in cubes
  • 1/2 kg boiled chick peas
  • 1 onion cut in cubes
  • Coriander for garnishing.
  • For Sweet Chutney
  • 1 cup Yogurt
  • 3 tbsp Tamarind paste
  • 2 tsp sugar

Directions:

  1. For the Gol gappay

  2. Mix salt and sooji together.
  3. Add water to the mixture until a dough starts to form. You need the dough to be slightly soft, so keep on kneading it.
  4. After the dough is ready, roll it out to make a large flat piece. Use a round cutter to cut out shapes. make sure that they are very thin.
  5. Now deep fry them in hot oil until they become puffy and a crisp and golden brown.
  6. For Tamarind water
  7. Mix all the ingredients together and make sure everything is homogeneous.
  8. For Chutney
  9. Mix all the ingredients together and cool.
  10. Final Serving.
  11. Use your thumb to make a hole into the crisp Gol Gappay, add the mixture, tamarind water and Chutney enough that it holds. Serve cool with Tamarind water on side!
